These are some of my very favorite muffins! They are packed with fruit and vegetables and you can't even tell! They are delicious and come together really quick, especially if you have a food processor to do the chopping for you. My grandma loves to make these when we are all together for breakfast. I hope you enjoy!
2 C flour
3/4 C sugar
2 t baking powder
1/2 t baking soda
2 t cinnamon
1/4 t salt
2 C finely shredded carrots (this is where the food processor comes in handy!)
1 C finely chopped or shredded apples
1 C raisins
1/2 C chopped nuts (optional)
1/2 C unsweetened shredded coconut
3/4 C shredded zucchini (this is optional but makes them moist and you get an extra veggie!)
Preheat oven to 350 degrees. In a large mixing bowl, stir together the flour, sugar, baking powder and soda, cinnamon, and salt. Stir in carrots, apples, raisins, nuts, coconut, and zucchini. In a separate bowl (although I do it in the same bowl because I don't want to wash dishes) stir in eggs, oil, and vanilla. Add the liquid ingredients all at once to flour mixture until everything is moistened. It may seem a little dry, but it turns out! Gently spoon batter into lightly greased muffin pan. Bake for 30 minutes! Enjoy!
